Instructions

  • In a blender or a large bowl, combine the eggs, whole wheat pastry flour, sugar, unsweetened cocoa powder, and milk. Blend until the mixture is smooth and lump-free. If you’re using a large bowl, an immersion blender works wonders for achieving this consistency. While whisking is an option, a blender or immersion blender will yield a much smoother batter, which is key for delicate crepes. Finally, add the melted butter and blend for another minute to ensure it’s fully incorporated into the batter. For best results, let the batter rest for 15-30 minutes at room temperature, which allows the flour to fully hydrate and results in a more tender crepe.
  • Heat a large non-stick skillet or crepe pan over medium heat. It’s crucial to allow the skillet a good few minutes to fully heat up and achieve an even temperature across its surface. This prevents sticking and ensures consistent cooking. Once hot, lightly grease the pan if needed (the melted butter in the batter helps, but a tiny wipe of oil for the first crepe can’t hurt). For an even deeper chocolate flavor, I sometimes use a mix of regular and extra dark cocoa powder.
