Spinach Pesto

Ingredients

  • 4 C spinach
  • 1 C packed basil leaves
  • 3-4 cloves garlic
  • 1/2 C fresh grated Parmesan cheese
  • 1/2 tsp sea salt
  • 1/4 C walnuts
  • 1/2 lemon juiced
  • 1/3 C good quality extra virgin olive oil more as needed

Instructions

  • In a food processor, add the spinach, basil, garlic, cheese, salt, walnuts and lemon juice. Ensure all ingredients are fresh for the best flavor.
  • Turn on the food processor and slowly drizzle in the olive oil until the pesto comes together into a fairly smooth sauce. Be sure to stop processing while the pesto still has a little bit of texture to it, preventing it from becoming overly puréed. You may need to scrape down the sides occasionally to ensure everything is incorporated.
  • Remove from the food processor and taste. Adjust salt, lemon juice, or add a bit more olive oil if needed to reach your desired consistency and flavor. Store the fresh pesto in an airtight container in the fridge, pressing a piece of plastic wrap directly onto the surface to prevent oxidation and keep its vibrant green color for up to a week.
  • To store even longer, freeze small or individual portions in ice cube trays or small freezer-safe containers until ready to use. Once frozen solid, transfer pesto cubes to a freezer bag for convenient storage for several months.

Notes

To make this nut free, try sunflower seeds or pumpkin seeds. They have a different flavor, but taste good too and add a wonderful texture!

This is my go-to recipe for pesto even when I have lots of basil, as it yields a milder, yet equally delicious, result. Feel free to substitute all the spinach for basil if you have an abundance, or if you’re like me, make an even larger batch of spinach pesto with a touch of basil and freeze it for the winter months. This ensures you always have a taste of summer on hand!
