Ingredients

  • 2 pints cherry tomatoes cut into small pieces
  • 2 cloves garlic finely minced
  • 2 tablespoons extra virgin olive oil

  • 1 cup lentils
  • Parmesan cheese to top if desired
  • Baguette pita or flatbread to serve

Instructions

  • In a large bowl, combine the finely chopped cherry tomatoes, minced garlic, extra virgin olive oil, and balsamic vinegar. Add the cooked lentils to this mixture. To prepare the basil, roll the leaves tightly into a cigar shape and use a very sharp knife to thinly slice them (this technique is called chiffonade). Add the chiffonaded basil to the mixture and stir everything together gently until well combined. Allow the flavors to meld for a minimum of 30-60 minutes at room temperature for the best taste. Just before serving, add the sea salt and stir once more.
  • To serve this delightful bruschetta, thinly slice a fresh baguette or cut pita/flatbread into individual serving pieces. Grill or toast the bread slices until they are golden and slightly crisp.
