  • 2 1/2 C water or vegetable stock
  • 1/2 tsp sea salt
  • 1 medium tomato diced
  • 2 large green onions finely chopped
  • juice and zest of one lemon
  • 1/4 C feta cheese crumbled or chopped
  • 2 tbsp fresh parsley finely chopped
  • 1 tbsp fresh oregano finely chopped

Instructions

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium-sized oven-proof pot with a tightly fitting lid, heat the olive oil over medium heat on your stovetop. Add the chopped onion and sauté for 6-7 minutes, stirring occasionally, until it has softened and become translucent. Add the minced garlic, stir well, and cook for just one minute more until fragrant, being careful not to burn it. Immediately add the short-grain brown rice to the pot. Stir and cook the rice for 1-2 minutes to lightly toast the grains, which enhances their nutty flavor and helps them cook more evenly.

However, if you must use dried herbs, use half the specified amount for fresh herbs (e.g., 1 tbsp dried parsley instead of 2 tbsp fresh) and add them to the pot along with the water or stock before cooking the rice to allow them to rehydrate and infuse.
