For this recipe, I used a PowerXL Vortex Air Fryer- 7qt, and it comfortably accommodated all of the fries. You don’t necessarily need to arrange them in a single, flat layer, especially if you have a larger air fryer. The key to even cooking and maximum crispness, even when the basket is a bit full, is to shake the basket thoroughly several times throughout the cooking process. This ensures every fry gets exposed to the circulating hot air.

You might be wondering, “Do I really have to soak the potatoes?” And the answer is, for truly crispy fries, yes, it’s pretty essential. For best results in your air fryer, stick to oils with high smoke points and a neutral flavor profile:

  • Avocado Oil: Excellent high smoke point, but can have a distinct flavor some prefer to avoid for fries.
  • Extra Light Olive Oil: Not to be confused with extra virgin, extra light olive oil has a much higher smoke point and a very neutral taste.
  • Light Olive Oil: Similar to extra light, offering a high smoke point and mild flavor.
  • Peanut Oil: A classic for frying, with a high smoke point and subtle nutty flavor.
  • Grapeseed Oil: Neutral in flavor and has a high smoke point.
  • Sesame Oil (Refined): While it has a high smoke point, its strong flavor might not be suitable for all fries.
  • Refined Safflower Oil: A great neutral-tasting option with a high smoke point.
  • Sunflower Oil: Another good choice for its high smoke point and neutral flavor.

For this specific garlic fries recipe, anything except avocado and sesame oil would generally be best due to their neutral taste, allowing the potato, garlic, and cheese flavors to shine. While some enjoy avocado oil for fries, I personally find its taste a bit strong for this particular dish.

You might see many air fryer French fry recipes that suggest using extra virgin olive oil. While it’s true that extra virgin olive oil has a delicious flavor, its low smoke point makes it less ideal for high-temperature cooking like air frying. It can break down and smoke, losing its beneficial properties. However, if extra virgin olive oil is all you have, you can likely still use it without major issues, but be mindful of the temperature and potential for smoking.

If you’re actively trying to minimize your oil intake, the air fryer is your best friend. For these fries, I highly recommend investing in an oil mister. Just two or three pumps of oil using a mister is often sufficient to achieve that perfect crispness without overdoing it. While air frying significantly reduces the need for oil compared to deep frying, a small amount is still generally recommended to help achieve that signature golden-brown color and desired crispy texture. Experiment with different oils and amounts to find your ideal balance.

The Glorious Cheese: Parmesan vs. Pecorino Romano

  • 2 teaspoons olive oil

  • 1 1/2 teaspoons garlic powder

For the Sweet Chili Ketchup:

  • ½ cup ketchup
  • 4-5 large basil leaves about ¼ cup
  • 2 tablespoons sweet chili sauce
  • 1 medium or large clove of garlic minced

Instructions

For the French Fries:

  • Fill a large bowl, big enough for all the fries, with ice (or at least very cold) water. This step helps remove excess starch for crispier fries.
  • Peel the potatoes, if desired. For a rustic touch, you can leave the skins on, just ensure they are thoroughly scrubbed clean.
  • Carefully slice the potatoes into ¼-inch thick fries. Consistency in size is key for even cooking. If you cut them thicker, be aware that they will require a longer cooking time.
  • Immediately place the cut fries into the ice water while you continue to slice the remaining potatoes. This prevents oxidation and continues the soaking process.

  • Allow the fries to soak in the ice water for at least 15 minutes. During the last 5 minutes of soaking (after 10 minutes have passed), begin to preheat your air fryer to 365 °F (185 °C).
  • Once soaked, remove the fries from the water and pat them thoroughly dry with paper towels or a clean, absorbent tea towel. This step is crucial for crispiness.
  • In a large bowl, toss the dried fries with the olive oil and salt until every piece is lightly and evenly coated.
  • Place the seasoned fries into the preheated air fryer basket. Cook at 365 °F (185 °C) for 7 minutes, making sure to shake the fries well after approximately 3 minutes to ensure even cooking and browning.

  • If you have a smaller air fryer and need to cook the fries in multiple batches, you can keep the cooked batches warm. Turn your oven to 225 °F (107 °C) and place the finished fries on a baking sheet. They can be kept warm in the oven for up to 1 hour without losing much crispness.

For the Sweet Chili Ketchup

  • To prepare the sweet chili ketchup, add all the sauce ingredients (ketchup, basil leaves, sweet chili sauce, and minced garlic) to the bowl of a food processor fitted with an S-blade, or to a high-speed blender (using the small jar typically meant for nut butters or sauces).
  • Pulse the ingredients until the mixture is completely smooth and well combined. Transfer the finished sauce to an airtight container and store it in the refrigerator. It will stay fresh for up to 5 days.
