Toasting the coconut adds a depth of flavor that elevates these energy balls above the ordinary. It imparts a subtle nuttiness and enhances the overall taste experience, giving them a more sophisticated and intentional feel compared to standard raw coconut energy balls. This simple step makes a significant difference in the final product.
This recipe is inspired by my Paleo Energy Balls, with the addition of toasted coconut for an extra layer of flavor and texture. It’s a small tweak, but it creates a noticeable improvement in both taste and mouthfeel.
Keep these delicious energy balls on hand for a quick and satisfying snack, especially when you’re traveling or craving something sweet without the guilt. They’re perfect for those moments when you need a boost of energy or a healthy treat to curb your appetite.

Chocolate Coconut Energy Balls Ingredient Notes
Here’s a breakdown of the key ingredients in these chocolate coconut energy balls, along with details that affect the texture and flavor of the final product:
- Dates: For best results, use soft, sticky dates. These will blend easily and create a cohesive mixture. If your dates are dry or firm, soak them in hot water for 5–10 minutes, then drain them thoroughly before use. - Cashews: Roasted and salted cashews add depth of flavor and balance the sweetness of the dates and coconut. If you prefer to use raw cashews, add about 1/8 teaspoon of salt to the recipe.
- Shredded Coconut: Finely shredded, unsweetened coconut works best in this recipe. Avoid using long shreds, as they don’t incorporate as well into the mixture. Opt for the short, choppy-looking kind you see in the photos for optimal texture.
- Dutch-Process Cocoa Powder: Dutch-process cocoa powder gives the energy balls a smoother, less acidic chocolate flavor that pairs exceptionally well with the dates and coconut. However, you can also use regular, natural cocoa powder, like Hershey’s, if that’s what you have on hand.
Please note that the ingredients in the photo below aren’t to scale (they usually are).

Tips for Success: Perfecting Your Energy Balls
- Toast the Coconut Carefully: Toast the coconut until it’s just golden brown. It can quickly go from perfectly toasted to burnt, so keep a close eye on it.
- Cool the Toasted Coconut: Make sure the toasted coconut is completely cool before adding it to the food processor. Warm coconut can introduce unwanted moisture and affect the texture of the mixture.
- Adjust the Moisture: The mixture should easily stick together when pressed. If it’s too dry and crumbly, add water 1/2 teaspoon at a time until it reaches the desired consistency.
- Use a Scale for Uniformity: If possible, use a kitchen scale to portion the balls evenly. This will ensure they hold together better and have a consistent size and shape.
Make Ahead and Storage Tips
These energy balls are perfect for making ahead of time. Once rolled, store them in an airtight container at room temperature for up to 2 weeks. They will remain fresh and delicious, ready for whenever you need a healthy snack.
These energy balls also keep well in the refrigerator for several weeks or in the freezer for up to 3 months. If freezing, let them thaw at room temperature for a few minutes before enjoying. This makes them a great option for long-term storage.

Chocolate Coconut Energy Ball Variations
This base recipe is very adaptable and easy to customize to suit your preferences. Try these variations:
- Almond Coconut Balls: Replace the cashews with roasted almonds for a firmer texture and a slightly different flavor profile.
- Extra Chocolaty: Add an extra teaspoon of cocoa powder for a richer, deeper chocolate flavor. You may need to add a touch more water or vanilla to balance the dryness.
- Orange Chocolate: Add a pinch of orange zest to the food processor for a bright, citrusy twist that complements the chocolate and coconut beautifully.
- Nut-Free: Use sunflower seeds instead of cashews to create a nut-free version. The flavor will be slightly more earthy, but still delicious. Using roasted sunflower seeds helps to balance the flavor.
- No Coconut Coating: Skip rolling the balls in shredded coconut and leave them plain, or roll them in cocoa powder for a different presentation and flavor.
